Stir-fried Pickled Watermelon Rind With Bell Pepper, Garlic And Crushed Peppercorns


Heat mustard oil in a pan till it reaches smoking point. When the froth dies out, roast fennel, cumin and coriander seeds.

Add red and green chillies.
Once it stops crackling, add ginger and garlic and saute. Add tomato and turmeric powder.
Saute for about 2-3 minutes. Add blanched melon, spring onions, bell peppers and saute for 2-3 minutes.
Season with black peppercorns, lemon juice and salt.
Garnish with fresh coriander.
