Bhutta Till Methi Seekh


(Char-grilled skewer of young corn kernel, with fenugreek, sesame seeds, ginger and cottage cheese.)

Preheat a convection oven to 275-300°C or fire a portable charcoal griller and let its flames burn out till it mellows to required strength. Meanwhile, in a mixing bowl or a food blender, gently mix all the ingredients together till mixture attains a binding consistency.
Ensure that it doesn't get too mushy.
Check for seasoning. Bind a small portion of the mixture along the skewers evenly using your palm.
Cook it evenly on the oven or on the griller till it turns golden.
Serve hot with a relish of your choice.
